We are looking for an experienced Head baker for one of our client based in Dubai.
Job Objectives:
As the Bakery chef , it is your duty to report directly to the head Chef and to assume total accountability for the assigned department.

Responsibilities:
- Operate ethically protecting the company and ensure there are no violation of company policies and procedures.- Ensure the smooth operation of the kitchen in order to exceed company objectives.
- Work with the Executive Chef to create standardized recipes that will enable the Bakery kitchen department to operate at a reasonable cost for food.
- Check the prepared bread and pastries on the production line for taste and temperature on a regular basis.
- Ensure that every production line for bread and pastries has a consistent appearance.
- Presentation and garnishing have to be done in accordance with standards.
- Oversees and fully carries out the portion control set forth in the recipe cards in order to reduce waste and spoilage.
- Prepares and bakes a variety of foods, either regularly or in response to special requests or events.
- Ensure that all baked goods are kept at minimum par levels.
- Develops original baked goods recipes and presentations.
- Oversees initiatives and makes all the bakery and breads needed for all restaurants, events, and other specialty orders.
- Checking of supplies and efficient coordination between the kitchens and other departments.
- Supervise the staff performance on day to day working, hygiene, grooming, etc.; strictly ensure that the staff generalappearance is up to the company standard.
- Ensure safety, sanitation and security procedures.
- Monitor Assure food Safety Standards.
- Maintain adequate stock levels for the volume of your business.
- Conduct physical inventories.
- Ensure that all equipment is properly used, cleaned regularly, and kept in good condition.
- Review actual and budgeted production and identify reasons for variances between targets vs. actual.
- 5 years minimum in the kitchen, including 2–3 years in a leadership position
- Prior leadership experience in a Bake production and advanced knowledge of the principles and practiceswithin the F& profession are required.
- High school diploma or training certification.
- 5+ years of baking experience, or an equivalent, ideally with knowledge of a four- or five-star hotel
- certification in sanitation and food handling.
